Kamado Joe 100% Natural Lump Charcoal is the recommended heat source for your Kamado Joe Grill. It’s made from a blend of hardwood trees like oak. Our 100% Natural Lump Charcoal adds a signature charcoal flavor to your grilled and smoked food.

Burns Cleaner
That’s why steaks, ribs, seafood, and chicken are much juicier and more delicious when grilled over our 100% Natural Lump Charcoal. “Charcoal” briquettes contain binders like borax and starch. It also uses saw dust from post-consumer waste lumber and petroleum additives for the “instant light” versions.

Burns Hotter
Our 100% Natural Lump Charcoal allows you to cook at temperatures above 750°F. High temperatures between 600°F – 700°F are perfect for the of steakhouse searing that is found in fine steakhouse restaurants. Those temperatures give ribeyes and other steaks that signature ”sizzle” off the grill. It’s also the choice of professional and competition chefs around the world.

Burns Longer
When you need to cook at low temperatures for an extended period of time, your best choice is 100% Natural Lump Charcoal. Depending on how you set up the charcoal pieces, amount of charcoal and the preferred temperature you use, you can expect to cook at low temperatures for 12 hours and longer.

Costs Less Per Use
Our 100% Natural Lump Charcoal is very economical to use and costs only pennies per cook. Our charcoal has a unique benefit in that it can be relit for multiple cookings. Just shut off the air to your grill after cooking and add a small amount of fresh charcoal with the existing charcoal.

Lighting Instructions:
Fill the fire box with 100% Natural Lump Charcoal just below the air holes to just below the top of the fire ring.
Place 1-2 Kamado Joe Fire Starter Cubes in the charcoal so 1/4 of the cube is visible.
Open the bottom draft door fully and keep the grill lid open.
Light the Fire Starter Cubes, and wait 10 minutes.
Close the lid with the top vent fully open, wait 5 minutes, then adjust air flow for your desired temperature.
Advisory: Never use lighter fluid or petroleum-based combustible fluids. It will absorb into the ceramics and impart an undesirable taste to your food.

CLASSIC HEAT DEFLECTOR

Classic-Heat-DeflectorThe Kamado Joe Heat Deflector adds great flexibility to your Kamado Joe grill. It allows you to bake, roast and smoke with indirect heat. Our Heat Deflector circulates the heat around your food to cook it slowly, which keeps it incredibly moist and tender. The Heat Deflector frame can also be used by itself to raise the cooking grate. It reduces the potential of charring tender foods like seafood and vegetables.

Cooking Configurations
Bottom Position
This is the most popular configuration for cooking food like ribs, Boston butts, briskets and poultry at very low temperatures. This configuration allows you to place a drip pan up to 3″ deep between the ceramic plate and cooking grate.
Top Position
This is the best configuration for baking food like pizza (Pizza Stone required), bread and casseroles. Use the ceramic plate in the top position to allow more heat to circulate around your food. This configuration does not allow a drip pan to be used.
Frame Only
Use the Heat Deflector frame only to elevate your cooking grate for grilling food like seafood and vegetables. The benefit of this configuration is that it reduces the direct heat on your food. It is also good to create “hot” and “warm” zones in your grill to prevent your food from charring. Just set up your charcoal to one side of the fire box and place your food on the opposite side of your grill.
Cleaning
The ceramic plate will darken over time and this is normal. Cleaning solutions should not be used, because they will be absorbed into the plate. If you have drippings that have charred, simply brush off as much as possible with a wire BBQ brush and store in a dry place. To clean off any residual food, simply flip the ceramic plate “food side down” the next time you cook. The heat from the charcoal with burn it off.

BIGJOE HEAT DEFLECTOR

BigJoe-Heat-DeflectorThe Kamado Joe BigJoe Heat Deflector adds great flexibility to your Kamado Joe grill. It allows you to bake, roast and smoke with indirect heat. The BigJoe Heat Deflector circulates the heat around your food to cook it slowly, which keeps it incredibly moist and tender. The split design also allows you to cook with direct and indirect heat simultaneously. The BigJoe Heat Deflector frame can also be used by itself to raise the cooking grate to reduce the charring of tender foods like seafood and vegetables.

Cooking Configurations
Bottom Position

PIZZA STONE

Pizza-StoneThe Kamado Joe Pizza Stone allows you to bake restaurant-quality pizza at home. The Pizza Stone distributes heat evenly and absorbs excess moisture for a pizza that comes out hot, full of flavor with a crispy crust. While we call it a Pizza Stone, it is really a “Baking Stone”. You can use to bake breads, cookies, hot appetizers, casseroles–virtually anything you bake in an indoor oven.

Caring for your Pizza Stone is easy, and here are a few things to keep in mind. Your Pizza Stone will darken with use, and this is normal. Your Pizza Stone is ready to use. You should not season it with olive oil or other cooking oils. The Kamado Joe Heat Deflector must be used with the Pizza Stone to avoid burning the pizza.

Tips

Do not soak in water (It may cause the pizza stone to crack with the next use).
Do not use cleaning chemicals or clean with soap and water.
Do not leave the Pizza Stone in an oven during self-cleaning mode (It may crack or shatter).

It’s like instantly adding a second grill, so additional servings will be ready at the same time. Our Grill Expander is made of 304 stainless steel for easy clean up and years of use, and it’s “cupped” feet keeps it stable on the cooking grate.

Fish, Seafood & Vegetables
Our Grill Expander is perfect for delicate food, because it elevates the food away from the heat source enough to prevent overcooking and reduce charring. Tip: Allow the grill expander to heat and lightly brush the top with olive oil to prevent food from sticking.

Steaks & Hamburgers
Grill several pieces of beef at one time with varying degrees of doneness. Just rotate the medium and well done meats up to the Grill Expander, while rarer meats are being cooked. Tip: Avoid cutting or using a fork to handle beef. The juices are pulled toward the surface of the meat when grilling. To keep steaks and hamburgers juicy, use tongs and allow it set sit two minutes before serving.

RIB RACK

Rib-RackThe Kamado Joe Rib Rack adds great versatility to your outdoor cooking. It optimizes your cooking space and allows you to cook larger quantities of ribs by cooking them vertically in the rack. The Rib Rack can also be used for cooking whole chicken legs, pork chops or any food that can be placed in the slots of the rack.

Use the Rib Rack to grill by placing it directly on the cooking grate, or use it with the Heat Deflector for low and slow indirect cooking. Constructed of 304 stainless steel for durability, years of use and easy clean up. Dishwasher safe.

Tips
Brush food with cooking oil to prevent sticking to the rack (if not using a dry rub)

CHICKEN STAND

Chicken-StandThe Kamado Joe Chicken Stand allows you to make incredibly tender chicken on all outdoor grills and indoor ovens. Make “beer can chicken” or add your favorite marinade to the Chicken Stand. The Chicken Stand is all ceramic and dishwasher safe for easy clean up and years of use.

Methods
Grilling
Direct Method (1 hour @ 350°F (175°C) OR 8 minutes per pound)
Place chicken on Chicken Stand directly on cooking grate.
Recommended for chickens and other foul 5lbs in weight or smaller.
Roasting
Indirect Method (1.75 hours @ 325°F (160°C) OR 15 minutes per pound)
Use Heat Deflector in the bottom position. Place drip pan between the Heat Deflector and the cooking grate.
Smoking
Indirect Method (3.5 hours @ 225°F (105°C) OR 30 minutes per pound)
Use Heat Deflector in the bottom position. Place drip pan between the Heat Deflector and the cooking grate.
If you are using an internal thermometer, the target temperature is 160°F (71°C).
Grill Types
Briquette Charcoal Grills
Use the Direct Method above as a guide and place the chicken and Chicken Stand directly on the cooking grate. Alternately, you can use a ceramic baking/pizza stone or metal drip pan on the cooking grate for indirect cooking. If your grill does not have a thermometer, monitor regularly.
Gas Grills
Use the indirect Method above and place the chicken and Chicken Stand on an unheated area of the cooking grate. Use the burner on the opposite side of the grill. You can also use a drip pan under the chicken or place the chicken and Chicken Stand directly in the drip pan.
Indoor Ovens
Use the “Roasting” Indirect Method on the back of this package as a guide for cooking time and temperature. Place the chicken and Chicken Stand directly on a drip pan.
Recipes
Beer Can Chicken
The Kamado Joe Chicken Stand will hold one 16 oz. bottle of beer. Alternately, you fill the Chicken Stand half way full of beer, then add your favorite ingredients (e.g. butter, onions, garlic, chile peppers).
Marinades
Use any prepackaged marinade or your own recipe and fill the Kamado Joe Chicken Stand 3/4 of the way full. Create your own recipe and experiment with fruit juices like apple, orange, pineapple or cranberry. Add your favorite herbs or spices to the juice like bay leaves, thyme, rosemary or sage.
Prep Instructions
Remove giblets package from whole chicken and trim off any excess skin
Wash chicken and pat dry outside with paper towel
Add your favorite dry rub to the skin and/or between the meat and skin
Use the legs of the chicken to balance it on the Kamado Joe Chicken Stand
